Windy Hill Potato Casserole

Ingredients

  • 4 large Idaho potatoes, cooked and peeled
  • Salt & Pepper
  • 1 cup grated sharp Cheddar cheese
  • 1 cup chopped onion
  • 4 oz. chopped pimentos
  • 1 (4-oz.) can chopped green chilies
  • 1 (10-3/4 oz.) can cream of chicken soup

Directions

Use a 3-Quart shallow baking dish prepared with spray-oil. Slice the cooked potatoes to cover the bottom of the dish; salt and pepper to taste. In a bowl, mix all remaining ingredients, and spread over the potatoes. Bake at 350 degrees for 45 min.
Serves 6 to 8.
